Ingredients:
- 1 Shortbread Recipe (Click here for recipe)
- 6 TSP Favorite Fruit Jelly
- Powdered Sugar for sprinkling
- 3 Pieces of Fresh Fruit (Matching your fruit jelly selection), Cut in half to form 6 Pieces
Recipe:
Preheat oven to 350 Degrees. Place your shortbread cookie dough onto a lightly floured surface and roll out evenly, until about 1/8 inch thickness. Using a cookie cutter or a water glass, cut 10-12 round cookies from your dough. If necessary, gather the dough together and roll out again until you are able to cut out enough pieces.
Placing your cookies on a cookie sheet, bake for 18-20 minutes, until your cookies are a slight golden color. Remove from the oven and let cool completely – about 20 minutes.
Place 1 TSP of your favorite jelly on each of one half of your cookies – spreading evenly. Now place your second half of cookies on top of the first to form 5-6 sandwich cookies.
With a sifter, sprinkle a layer of powdered sugar onto your cookies before placing a half piece of fruit on the top center of your sandwich cookie. For example: If your jelly is raspberry, then place 1/2 piece of raspberry on top of your cookie.
