Delicious Chocolate Dipped Wafer Cookies Recipe

Chocolate Dipped Wafer Cookies Recipe
These sweet treats are pretty, delicious, and easy to make. No matter how you choose to decorate them, they will create a delicate sparkle and oomph to your menu.
Ingredients:
- 1 Package Vootman Vanilla Wafer Cookies – or brand of your choice
- 1 Package Vootman Strawberry Wafer Cookies – or brand of your choice
- 11 ounce Package Ghirardelli Chocolate Premium Baking Chips Classic White – Ghirardelli is not required as long as you use a good quality white chocolate
- Baking decor Sprinkles – color to match your theme
- Sparkling Sugar Sprinkles
- Silver Cupcake Gems (Ball Shape)
- 1 Sheet of Wax Paper – size of cookie sheet pan
- 1 Cookie Sheet Pan
- 4 Glass Cereal bowls
- Microwave Oven
Recipe:
Have all your supplies on the counter and ready to work with.
Laying wax paper flat on a cookie sheet, set 8 Strawberry and 8 Vanilla Wafer Cookies on top of wax paper, leaving approximately 2″ inches of space between each cookie. Pour sprinkles. sugar, and gems into a cereal bowl (one bowl for each) and have ready for dipping. Pour contents of White Chocolate bag into glass bowl and microwave for 15 second intervals. With a small spatula, stir chocolate after each interval and continue process until chocolate is smooth and silky.
Moving quickly, dip 1 1/2″ length of each wafer cookie into the melted chocolate and let excess chocolate drain off before dipping cookie into the sprinkles, or sparkling sugar, and place back on cookie sheet to dry. On the remaining 5 cookies carefully place a row of silver gems on the chocolate and leave to dry.
As you are working, your chocolate will start to harden. Simply repeat the process of microwaving and stirring the chocolate at 15 second intervals until it is, once again, smooth and silky. You can do this several times without burning your chocolate.
