Cucumber Cream Cheese Sandwich Recipe

Ingredients:

8 Slices of soft white (or wheat) bread – crust edges trimmed off
1 Thinly sliced english cucumber
7.5 ounces Garden Vegetable Cream Cheese
2 Tsp on chopped fresh dill

Slice The Cucumbers

Evenly and thinly slice your washed cucumbers. You don’t want your cucumbers to be too thick in these mini sandwiches or else it will overpower the sandwich.

Now that your cucumbers are thinly slices, you will pat them dry with a paper towel to remove any excess moisture.

Prepare The Cream Cheese Mixture

Chop 2 tsps worth of dill and mix it together with 7.5 oz vegetable cream cheese. I recommend you start with 2 tsps of chopped dill and add more if you feel you would like a stronger flavor.

Spread Cream Cheese Mixture To Bread

Now you’re ready to spread a thin layer (approximately 1/8″ inch) of cream cheese on each slice of bread. This measures out to being about 1 ounce of vegetable cream cheese on each slice of bread.

Building The Sandwich

Now it is time to add the cucumbers! Layer your cucumber slices on top of the cream cheese mixture. I recommend you have some overlap between each cucumber slice so that each slice is half-way over the prior slice.

Now you will place the remaining slices of bread with cream cheese over the cucumber slices to form a cute little cucumber sandwich!

Carefully slice each sandwich lengthwise to form 2 rectangular finger sandwiches.

You can repeat these instructions until you have the desired amount of sandwiches for your event!
